I will never forget the amazing ramen that Hiroko served us. It must pain the Japanese that Americans only know ramen as plain noodles with a packet of artificial flavor. Kimchi in ramen - now that sounds interesting!


How could any of us forget that wondrous ramen that took days of preparation.

Honestly, what Hiroko prepared was still much better. Hiroko, you should be very proud. Yours is at a level much higher and greater. You have taken ramen to new heights and sophistication. But surely, we need to cut the street stands some slack, they serve street side and for thousands.

The Kimchi in the ramen made for amazing umami and breadth of flavors. Was a wonderful offering on the side.

you need to find the ones with people standing in line. the best shops have stocks made over days and days and is difficult to imitate at home. its the difference between getting a burger on the street and going to say, "in n out" or at "the shake shack" or actually eating a great beefy burger on the beach in bahamas (the best ones)


Your website is so beautiful and you life is so exciting! You live to the fullest. Japan looks amazing through your eyes.
